Waldorf Salad


Apples at hand and a friend coming over to meet my sister..... Salad is the first thought...

Washington Apple Commission India office contacted me about the launch of Washington Apples in India. Had made Steamed Pudding and Apple Crumble with the Red Delicious, Golden Delicious, Granny Smith and Cripps Pink. Have decided to use the Gala and Fuji to make Waldorf Salad.

Waldorf Salad
Ingredients
1 medium Apple, cored and coarsely chopped
1 medium Tomato, coarsely chopped
1/2 cup thinly sliced celery
1/2 cup halved grapes
1 Cucumber; peeled, halved lengthwise and sliced
1/2 cup reduced calorie mayonnaise or salad dressing
1/3 cup lemon flavor yogurt
1 tablespoon honey
Slices of Feta Cheese
Lettuce leaves (optional)
[be sure to wash all ingredients well]
Method
1.Toss together the apples, celery, grapes, feta cheese and tomatoes in a large bowl.
2.Stir together the mayonnaise or salad dressing, yogurt and honey in a small bowl; fold gently into fruit mixture.
3.Cover and chill for an hour or so.
4.Serve on lettuce leaves if desired or just chop them up n toss them in just before serving.

Verdict
I enjoyed the freshness of this crunchy salad..... It's an ideal thing to serve to hungry lawyers who come home after a hard day of work..... :)
