Mawa Cake and Masala Cookies for Daring Bakers Challenge

Aparna of My Diverse Kitchen was our August 2013 Daring Bakers’ hostess and she challenged us to make some amazing regional Indian desserts. The Mawa Cake, the Bolinhas de Coco cookies and the Masala cookies – beautifully spiced and delicious!

I've been making and eating desserts from all over the world since a year especially french. This challenge has bought me back to my roots (Sounds cliche but totally true) . The challenge wasn't difficult but had various elements which needed some pre-planning. It was well worth the wait.

Mawa Cake is a cake found in Irani cafés in India. Mawa is basically Khoya and my favourite indian mithai is the white barfi made from Khoya. Khoya is made by reducing milk on a medium-low flame till we get a crumbly texture of milk solids. It's this mawa and cardamom which gives this cake it's signature flavor and texture of a pound cake.

Mawa Cake
For the Mawa: 1 litre (4 cups) full fat milk

For the cake:
1/2 cup (1 stick) (120 ml) (4 oz) (115 gm) unsalted Butter (soft at room temperature)
3/4 cup (180 ml) packed crumbled mawa
1-1/4 cups (300 ml) (10 oz) (280 gm) castor sugar
3 large eggs
5 to 6 cardamom pods, powdered, (about 1-1/2 tsp powdered cardamom)
2 cups (500ml) (9 oz) (260 gm) cake flour
1 teaspoon (5 ml) (5 gm) baking powder
1/4 teaspoon salt
1/2 cup (120 ml) milk
1 teaspoon (5ml) vanilla extract (optional)
Cashewnuts (or blanched almonds) to decorate (about 18 to 20)

Method:
1. First make the “Mawa”. Pour the milk into a heavy bottomed saucepan, preferably a non-stick one. Bring the milk to a boil, stirring it on and off, making sure it doesn’t stick to the bottom.
Turn down the heat to medium and keep cooking the milk until reduces to about a quarter of its original volume. This should take about an hour to an hour and a half.

2. The important thing during this process is to watch the milk and stir it frequently to make sure it doesn’t stick to the sides or bottom of the pan and get burnt. The danger of this happening increases as the milk reduces and gets thicker.

3. Once the milk it has reduced to about one fourth, 1/4 quantity, lower the heat to low and let cook for a little while longer. Keep stirring regularly, until the milk solids (mawa) take on a lumpy appearance. There should be no visible liquid left in the pan, but the mawa should be moist and not stick to the sides of the pan.

4. Remove the pan from heat and transfer the mawa to a bowl and let it cool completely. Then cover and refrigerate it for a day or two (not more) till you’re ready to make the cake. It will harden in the fridge so let it come to room temperature before using it. You should get about 3/4 to 1 cup of mawa from 1 litre (4 cups) of full-fat milk.

To bake the cake: Pre-heat your oven to moderate 180°C/350°F.
1. Beat the butter, the crumbled mawa and the sugar in a largish bowl, using a hand held electric beater, on high speed until soft and fluffy.

2. Add the eggs, one at a time, and beat on medium speed till well incorporated. Add the vanilla and milk and beat till mixed well.

3. Sift the cake flour, baking powder, cardamom, and salt onto the batter and beat at medium speed and well blended. If you cannot find cake flour, place 2 tablespoon of cornstarch in the bottom of your 1-cup measure and then fill it with all-purpose (plain) flour to make up to 1 cup.

4. Grease and line only the bottom of an 8 inch (20 cm) spring form pan. Pour the batter into this and lightly smooth the top. Place the cashew nuts (or blanched almonds) on top of the batter randomly. Do not press the nuts down into the batter. A Mawa Cake always has a rustic finished look rather than a decorated look.

5. Bake in a preheated moderate oven for about 1 hour until the cake is a golden brown and a skewer pushed into the centre comes out clean. Do not over bake the cake or it will dry out. If the cake seems to be browning too quickly, cover it will aluminum foil hallway through the baking time.

6. Remove from oven and allow it to cool for 10 min in the tin. Release the cake, peel off the parchment from the base and let it cool completely.

The Masala Biscuits were a surprise packet for me. Being a first, I was a bit apprehensive about how they'll turn out. These are bound together with yogurt. One must be careful of how much yogurt is added as too much of it makes the dough very fiddly to manage. I didn't use sesame seeds as i didn't have any at hand and I'm not a huge fan either.

Masala Biscuits

Ingredients:
1-3/4 cup (420 ml) (9 oz) (250 gm) all-purpose (plain) flour
2 tablespoons (30 ml) fine white or brown rice flour (optional)
1 teaspoon (5 ml) (5 gm) baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt (or according to your taste)
1/2 cup (1 stick) (120 ml) (4 oz) (115 gm) chilled butter, cut into small pieces
3 green chillies, deseeded and chopped
3/4 inch (20 mm) piece of ginger, finely grated
1-1/2 teaspoon whole peppercorn, crushed coarsely
1-1/2 teaspoon cumin seeds, toasted and crushed coarsely
1 tablespoon (15 ml) (½ oz) (15 gm) granulated sugar
1-1/2 tablespoons finely chopped curry leaves
1 tablespoon finely chopped fresh coriander/ cilantro
3 to 4 tablespoons (45 ml to 60 ml) cold yogurt
1-1/2 tablespoons black sesame seeds (or white sesame seeds)
A little oil to brush the tops of the biscuits/ cookies

Method:
1. Put both flours, salt, baking powder and baking soda into the bowl and add the pieces of chilled butter.
Pulse until the mixture takes on the texture of breadcrumbs. Now add chopped green chilies and ginger.

2. Then add crushed peppercorn and cumin, sugar, curry leaves and coriander leaves. Pulse a couple of times. Then add 2 tablespoons of yogurt and pulse again. Add one more tbs of yogurt (or two, as much as needed).

3. Pulse again until the dough just comes together and clumps together. Do not over process or knead.
The dough should be just moist enough to bring everything together to shape into a rough ball.

4. Flatten it into a disc and cover the dough with plastic wrap and let it rest in the refrigerator for at least hour. You can also leave it overnight (up to about 24 hours). Pre-heat your oven to moderate 180°C/350°F/gas mark 4.

5. Line your baking trays with parchment or grease them with oil. Lightly dust your working surface.
Roll out the dough to 1/8”(3 mm) thickness, not more or your biscuits/ cookies will not be crisp.

6. Sprinkle the sesame seeds uniformly over the dough and use your rolling pin, very lightly, to press them in.
Using cutters of your choice (about 2-1/4 inch (55 mm) to 2½ inch (65 mm) in size), cut out biscuits/ cookies.

7. Place them on lightly greased baking trays. Brush a very thin coat of oil; this will help them brown while baking.Bake in a preheated moderate oven for about 20 to 25 minutes or till they’re done and golden brown on the top.

8. Cool on the trays for about 5 minutes and then on racks. Once they’re completely cool, they should be crunchy.
Servings: Makes about 2 dozen masala biscuits/ cookies that are 2 1/4” (55 mm) to 2 ½” (65 mm)wide.

Set the cake to my neighbors. The kids and adults both enjoyed it over tea. Children are just so honest in their expressions. If it's nice, it's nice else they just won't have it. The biscuits were all over in just 2 days. Anyone who crossed the jar would have a few.

Jenny's Date Cake ~ A Personal Touch

Was on holiday in Bangalore with family and loads of friends to catch up with. How can any holiday be complete for me without baking. Mami(the sweetheart that she is) had kept a recipe for me to try out. I was a bit skeptical about a date cake..... You'll read below about how wrong I was. Mami n I had such a fun time making this cake..... :)

The cake turned out amazing. Had taken it along when I visited Suma of Cakes and More and Madhuri of Cook-curry Nook. Both of them flipped out. Suma's kids wanted seconds and thirds..... Anytime children ask for seconds on a non chocolate cake..... preserve the recipe forever. Kids are the best critiques of comfort food and taste :)
Madhuri wanted the recipe to try out.... another testimonial..... A really cool fellow baker who takes classes in baking is asking for the recipe.... The recipe is a keeper, people....

Date Cake
Ingredients:
4 eggs
3/4 Teaspoon Baking Powder
2 Cups Flour (sifted)
2 Teaspoon Ground Ginger
2 Teaspoon Grated Ginger
6 Tablespoons Butter
1 Cup Gur

Date Sauce:
3 cups Chopped Dates
3 Cups Water
1+1/2 Teaspoon Baking Soda

Caramel Sauce:
Ingredients:
1 Cup Brown Sugar
1 Cup Butter [you can add more butter if you prefer a thicker sauce]
1 Cup Cream

Method:
Date Sauce:
1. To make the date sauce, boil the water and chopped dates till pulpy and squishy for about 20-30 minutes. As soon as you get a thick sauce add the baking soda and stir well.
Tip: Be sure to have a vessel thrice as large in volume as the sauce, the mixture will bubble up quite a lot. Put it aside to cool till room temperature
Cake:
2. Cream the butter and gur, till well incorporated.
3. Add 1 egg at a time and beat till incorporated.
4. Stir in the room temperature date sauce.
5. Fold in the sifted flour with Baking powder and spices.
Tip: Jenny's secret to this amazing cake.... mix it by hand. She says it adds the personal touch to the cake.

Caramel Sauce:
[am shamelessly picking up the steps from simplyrecipes.com as they've written it exactly like I wuold have done it along with instructions :) ]
1. First, before you begin, make sure you have everything ready to go - the cream and the butter next to the pan, ready to put in. Making caramel is a fast process that cannot wait for hunting around for ingredients. If you don't work fast, the sugar will burn. Safety first - make sure there are no children under foot and you may want to wear oven mitts; the caramelized sugar will be much hotter than boiling water.

2. Heat sugar on moderately high heat in a heavy-bottomed 2-quart or 3-quart saucepan. As the sugar begins to melt, stir vigorously with a whisk or wooden spoon. As soon as the sugar comes to a boil, stop stirring. You can swirl the pan a bit if you want, from this point on.
Note that this recipe works best if you are using a thick-bottomed pan. If you find that you end up burning some of the sugar before the rest of it is melted, the next time you attempt it, add a half cup of water to the sugar at the beginning of the process, this will help the sugar to cook more evenly, though it will take longer as the water will need to evaporate before the sugar will caramelize.

3.
As soon as all of the sugar crystals have melted (the liquid sugar should be dark amber in color), immediately add the butter to the pan. Whisk until the butter has melted.

4. Once the butter has melted, take the pan off the heat. Count to three, then slowly add the cream to the pan and continue to whisk to incorporate. Note than when you add the butter and the cream, the mixture will foam up considerably. This is why you must use a pan that is at least 2-quarts (preferably 3-quarts) big.

5. Whisk until caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a glass mason jar and let sit to cool to room temperature. (Remember to use pot holders when handling the jar filled with hot caramel sauce.) Store in the refrigerator for up to 2 weeks. Warm before serving.

Another noteworthy tip would be to use the best dates that you can get. The dried up ones won't do much for this cake but the semi moist ones will take the cake's flavor and consistency to a different level. We arrived at this conclusion after making the cake twice with different dates each time.

Note to Self: Am in love with Mr. Faber after making this cake... Total convert.......

Verdict:
The end was just mindblowingly fantastic... [pardon the grammar but this cake really deserves this praise n more]. The firm crust and soft moist insides with flavors which just have to be eaten to be believed. The caramel sauce packs-in-a-punch, by adding body and multiplying the flavor by 100.
This recipe is definitely a keeper forever :)
Talking about this cake has made me drool again..... I need another slice... running to the kitchen.....

Comforting Banana Chocolate Cake for Amit Beer Ghosh

At the onset.....
Admit it....
I'm taller than you n that too by a good margin..... ;)

Now that, that's out of the way... let's get on with this post.....
Amit's been a member of the 99acres.com product team for long enough to be On-My-List and so much more. It's always a a bitter sweet moment when a colleague moves to another company. A friend is happy that a friend is moving closer to their goals.... what lingers is memories....

He's a great human being, with a great sense of humor and willing to extend support in the team and outside. Have really enjoyed working with him. His creative n writing skills are amazing amongst so many other skills :)

This is the collage we made to give him for his farewell.... It's got some very precious moments we've shared like Birthday's , Outings, Photo shooting trips, Rock Star trips, many days when tiffins n sweaters were left in office, Diwali/Independence day/ Christmas parties. He's even won a prize for my 'Aaj Mein Khush Hun' contest, was one of my first serious clients on Valentine's day. One was the memorable parties was at his place.... can't forget the hilarious fun we had playing pictionary and yummiliscious spread of bengali food laid out by aunty.

As you would have seen by now that music is an essential part of his being.... so his cake had to have some musical element to it......

and now for BADLA......... ;) How could we let him scott free..... The ceremonial decoration of the nose did happen as I could bear to see my hard work smeared on his face... ;)
When I asked Amit what flavours he wanted... pat came the reply Chocolate.... and as an after though he added 'and any other experiments you would like to do'.... lol..... It's evident that he loves Chocolate and I know that Rum is a soft spot considering Beer can't be put in a Banana Chocolate cake unless i get hold of a Guinness bottle..... So I made her a Banana Chocolate Cake which has a layering of rum soaked raisins n chocolate...

Amit Writes.....
I've known Nachi for about 3 years now (we share the same workspace in office), and for as far back as I can remember, she has always been treating us to royal desserts. Her reputation as a baker has increased manifolds in this period, to the point that new joinees get to hear of her more as the girl-who-bakes-fingerlickin-stuff than as a laptop-ing, document-writing, MIS-crunching product manager.

Her knack to theme-up her products and not-to-repeat has made her the favvvvorite of many in office. Monday mornings are not so blue-sy over at Infoedge, cause more often than not she will walk in with a scrumptious spread that she would have worked hard at over the weekend. As a result, absenteeism in our team on mondays has seen a huge decline in recent times. The office cafeteria has also seen unprecedented sales dips on those days, to the extent that it has now stopped stocking pastries, cakes, muffins etc etc - they just ain't selling no more!

I am not a connoisseur by any stretch of imagination. I am not particularly aware of the various dessert-y options out there. Heck I even find it hard to pronounce the names that I see on display at a baker's. But I do know my chocolate, and she has a particular penchant for products of that kind. So my good luck, that on that fateful day of placements at B-school, of the 3 career options I had, I chose this one. Birthdays or beer-days, office-festivities or post-office parties, no celebration is complete without Nachi surprising us to a lovely new treat. It's quite a sight actually, when she's about to unveil her latest creation - A quick look around the table would show people drooling all over, armed with their spoons and forks ready to dig in :)
For the two birthdays I have celebrated in this office - I have been treated to a Chocolate Blackout cake and a Lemon Lava cake - And boy, both of them were sinfully delicious! Birthdays at Infoedge, are usually team outings to trendy restaraunts, ending with a traditional cake cutting / smearing ceremony. I've had mine at 'It's greek to me' and 'Lotus Pond'. The Lemon lava cake, this last birthday, was a little out of the ordinary for me as I'm usually one with very strong chocolate preferences, but I enjoyed this one so much that for the next 2 days I was having the leftovers for breakfast, lunch and dinner!
Nachi, it's been great knowing you, working with you, hanging out with you .. and of course greedily devouring your cakes :D ... Keep the goodies flowing in....
All The Best... :)
Ps: Will treasure the pencil....

Fruit in Baking ~ Monthly Mingle Hosted By Deeba

The minute I read Deeba's post where she's guest hosting Meeta's Monthly Mingle with the theme Fruits in Baking.... I just had to get cracking....... Also this month's her birthday.... So what better than making her something with fruits in it.... Brain Ticking... What is it that I make well with fruits? What fruits are easily available in the market.... Apples n Bananas... She's already done so much Apple that my Apple Crumble and Apple Pie was not a patch on the awesome stuff she does......

Ok so I could do Banana Upside down cake... I love it and so do others... But Deeba likes COFFEE
or maybe a Banoffee Pie which I haven't made for some time with a twist, will add coffee to it.....

Come 14th November....called her up to wish her n check what's a good time to drop by as her sister's in town n wish her with a surprise..... n guess what she pried out of me what the surprise was... and thank God she did.... She doesn't like Bananas....... WHACK...... idea smacked out...
Back to Square 1....... with hardly any time left till the evening....... Any good cake needs time....

Racked my brains again..... She likes COFFEE[Since it's Tiramisu month, it fits the coffee bill perfectly.... Then alarm bells ring to remind me that's what I made for her last year too... can't make the same thing again] Back to Square 1....... Yet Again......
Hmmmm so now I start thinking Cake... So there's COFFEE again[that's permanent on the Ingredient Checklist] n in spices she uses Cinnamon fairly regularly[brings out the flavour of coffee with brilliance, works well for me... added to Ingredient Checklist] and there is loads of Chocolate[added to Ingredient Checklist] always which her kids love.....
Hey!!!! where's the Fruit element??? I add Rum soaked raisins to the Ingredient Checklist cause they are my favourite.... and yes... Raisins are fruit cause they are dried grapes.....
So off I go to put together her cake with COFFEE, Cinnanon, Chocolate n Raisins.

Raisins are often known as nature's candy, they are counted amongst the most nutritious dried fruits in the whole world. They are cholesterol-free, low in sodium, high in fiber and totally fat-free. Apart from that, they contain a lot of vitamins and minerals, making their nutritional value very high. Raisins are the best source of quick energy, as they contain 70 percent pure fructose, which gets digested by the body easily and gives instant energy.[Source]

Lemon Cake, Lemon Tarts, Salad Sticks ~ Happy Anniversary Shikha & Sujith n Surprise for Sharad

The little babies were the surprise for Sujith, Shikha n Sharad. Sujith doesn't like chocolate[Wonder how such people exist on this planet] and Sharad is a die hard Lemon Tart fan and loves his C-H-E-E-S-E. They were coming over for tea, all I told them was there will be Lemon cake.... After eating it a few days ago for Sharad's birthday... They wanted it again.... though I'm bored of making it now but if that's what they want, that's what they'll get... I'll have my fun with the other surprise desserts......

Trying to make pastry in the sweltering heat of delhi would be committing suicide cause the butter will keep melting while pastry as we all know needs chilled everything.... So how do we get Lemon Tarts without pastry shells..... Voila... We crumb glucose biscuits, bind them with lots of butter n pop them in the oven with their tart shells......
We get perfect Tart shells... would be a tad bit sweet as i hadn't Marie biscuits at hand while cooking. Glucose biscuits tend to be on the sweeter side....

That's Siya... Sujith n Shikha's 9 month old.... She's totally adorable and has a really mischievous smile...

We had such a good time together.... :)

That's Siya with her mommy n daddy.....

She made her mommy run around the whole room to finish off 1 banana... I think she was upset cause we ate all the goodies and she got just the banana.... Loved the Bunnies on her bib...

Had made a fresh garden salad with Mangoes, Cucumber, Cheery Tomatoes, Olives and Lettuce. Dressed it with Olive Oil, Honey, Sea Salt, Parsley, Garlic and Pepper.

The Jalapeño Cheese Poppers were a first time for me.... Made balls of shredded cheese stuffed with jalapeños, spiced it with the amazing woody flavour of Nutmeg. Deep fried them with a coating of eggwash and breadcrumbs. The warm melted cheese was so sinful....

Then came the Lemon cake... Siya wanted to crumble up the whole thing and had Daksayani[My kid sister] getting surprised n possesive of the cake....

Siya also liked the cake... and wanted more of it :)

These salad sticks have me hooked.... I've been making them very often... I used Cucumber, Tomato, Olives, Iceberg Lettuce and Pineapple. The dressing had Olive Oil, Honey, Fresh Lemon, Salt, freshly ground Pepper, Parsley and loads of Garlic. I made the dressing earlier and let it marinate for sometime before tossing it. Served it in abow and make sticks for the kids........ This fresh salad makes me forget the scorching heat outside.. 40 Degrees already....I'm going to melt pretty soon....
Sending these Salad Sticks to Pia's event 'Innovative Salad Event #1'.
Ingredient of the month- Cucumber

The biscuits shells were very easy to work with. Just put in some lemon curd and pop them in the fridge.... Lemon Tarts.., ready to go....
Shikha's tart has chocolate chips as the surprise element it it cause she loves chocolate.... Quite liked the chocolate n lemony flavours...

Shikha enjoyed her tart immensely but was so stuffed that some of it had to be a take away....

The surprised look on Sharad n Sujith's faces made this so worth it..... They couldn't hide their glee and had huge grins while tucking into them.....
