Book Club Chef ~ By my Guest Simran

This is the beginning of my celebrations for reaching 200 blog posts.... A lot of you will wonder, this is not your 200th post, so why the excitement.... Nope it's not... But getting to the 200th post has been a journey full of wonderful people who walked with me in life and some joined me thru the blog world...

So I thought of having an event called 'Celebrations' where I would open out my blog to some of my friends who would share some parts of their journey with me as Guest Posts......

Simran of Bombay Foodie is my guest today. She's recently completed her 300th post. Her pictures on Flickr. I was introduced to her blog thru some referring links and then met her thru Shaheen of Purplefoodie in Mumbai for an 'Upper Crust Food n Wine Event'. She's such a sweet person with a great hand in the kitchen n an imagination i like. She part of a club 'This Book Makes Me Cook' where they make something which draws inspiration from the book of the month. You can see Simran's creations here. She's done 26 till now... Quite a mean feat. My fav ones are 'A Harry Potter Special' and 'Alice in Wonderland'. I got inspired by this thought and made 'Hoopoe Lemon Cake inspired by Haroun n the Sea of Stories'.

This girl is so talented... She made amazing desserts like Cherry Tart, Macarons, Bakewell Tart, Almond Cake, Jammies, Coffee Cake, Fudgy Brownie Icecream, Phirni, Healthy Cake, Strawberry and Apple Jam, Chocolate Sandesh Truffles, Strawberry Cheesecake.

Her Indian repertoire has Corn Rice, Pao Bhaji, Sabudana Khichdi, Dhokla, Egg Korma, Sago Pops, Dosa, Healthy Spinach Rice, Appams with Sambar, Lima Beans Curry, Chegodilu, Pickle, Chana Haryali and Nariyal Burfi with a citrusy twist.

She love Italian and makes Veg Pizza, Mushroom and Mint Risotto, Tomato and Basil Sauce, Risotto Primavera, Rugelach, Spinach Risotto, Macaroni in Spinach Sauce, Sweetcorn Risotto, Focaccia, Mushroom and Capsicum Pizza, Mushroom Cream Pizza.
A girl who makes bread... really knows her oven... Wheat Bread, Herb Rolls, Carrot Herb Rolls, Gougeres, Cinnamon Rolls, Sourdough Success, Rye Bread.
She loves Sushi and has made Avocado and Corn Sushi, Nasi Goreng, Egg Salad Sandwich, Zucchini Caponata.
As a Daring Baker she would make me so curious with her updates when I wasn't part of this group and then come up with amazing stuff like Milanos, Dobos Torte, Nanaimo Bars, Tiramisu.
Her salads and soups are interesting like Chickpea Salad, Forbidden Rice Salad, Warm Potato and Bean Salad, Corn and Bean Salad, Corn Salsa, French Onion Soup, Mushroom Soup and Bean Soup.
Her smoothies are comforting and fruity.

A small something for the Indian readers of Simran... She will select 1 lucky commenter to win complimentary meal vouchers from Sushi at Moets, Defence Colony, New Delhi. So be sure to leave a note at the end of this post with your location. Readers in other countries can share the same with anyone in proximity of the bar.

A few months back, I walked into a food show to see a chef demonstration, watch a top chef cookoff, maybe buy a few select hard-to-buy ingredients. As I settled into the Italian food demonstration, purplefoodie introduced me to a cute, bubbly blogger visiting from Delhi. I instantly remembered Nachiketa from a post Deeba did about a visitor to her home, who took over her kitchen with her charm and her enthusiasm to learn cake decorating. She, on the other hand, recalled spotting my blog when I made the playing card cake in honor of Alice in Wonderland.

We bonded over pasta at a counter selling olive oil; a shared brownie. Nachiketa introduced me to a specialty chicken, then joined me on my quest for rice vinegar. Since then, I’ve become a big fan of Nachiketa’s way of baking – she bakes for friends, to make people happy on their birthdays, for countless aunts and cousins – all evidenced by beautiful, happy pictures. And you can't help grinning at yet another story of Daksayani, the cutest little sous chef in the whole world.

Then last week, Nachiketa asked if I will do a guest post for her; a run-up to her 200th post. I asked her what she would like me to bake. And all she wanted was something pretty that reflects me. Instead, I wanted to bake something that reflects Nachiketa, something full of happiness and sunshine. I picked Lime and Poppy Seed Muffins from baking bites.

There’s a bit of prep work here but the rest of the recipe is very easy once you get through it. First off, take one egg out of fridge so it’s a little less cold by the time you assemble everything. Melt 60 grams butter in the microwave and let it cool. Zest a lime. You need ½ tbsp of zest, and it was super easy in my case with my microplane and giant seedless limes I found last weekend. Then juice the limes to give you 1/3 cup lime juice (I only needed one of my giant limes, believe it or not!). Mix together 1 cup flour with ½ tsp each of baking powder and baking soda.

Beat ½ cup sugar with the egg. Whisk in melted but cool butter, lime zest and lime juice. Mix 1 tsp poppy seeds to the flour mixture, then add the liquid ingredients and whisk until everything’s combined and no streaks of flour remain. Pour into six muffin cups and bake at 190C for around 20 minutes. The flavor is very zingy, limes being more tart than lemons, but the sugar balances it out nicely. And with the crunch of poppy seeds, a lovely mix of flavors.

I wish I could send these to Nachiketa for real. Maybe on my next Delhi trip...

To Die for 'Banana Chocochip Muffins'

There are so many recipes on the net for 'Banana Chocochip Muffins' but Nigella's just rocks..... I watch her shows like religion.... I may not end up making everything she cooks cause my household is vegetarian[as an irony, am a total carnivore] but her desserts, they look like a dream. Her kitchen... To Die for and which is why I guess these muffins were also 'T0-Die-For'.....

Meetu, a renewed baker had made these and made me taste them in office.... I loved them, but eating them out of the oven was just another feeling.... So Soft, So moist and calling out to me... E-A-T M-E........

Made some plain Banana Muffins for Daksayani as she's not suppose to eat chocolate.... This little monkey loves to bake with me and potter around in the kitchen... It was such a task to get her to eat anything at all. The milk went in with the condition that I would let her bake and that she would get to drink the milk with a straw..... Yes Missy... anything to get that milk inside you.... :)

Another batch was done for my school friends Arunima [in the picture] and Swati[not in the pictures]. am glad they enjoyed them :)

The first batch that I did was at the beginning of the month... [with a variation of adding butterscotch sauce as the topping] and what a disaster.... both my ovens stopped heating mid way and they entire batch was close to wasted... I was near tears..... Gave the oven for repairs. Got them back after 2 weeks and cooked up the courage to make the muffins again......

Am so glad I picked up from where I left off..... The 2nd batch of muffins I took to work... The reviews were really encouraging.

The third batch was for my neighbors and some family members.... yet again... rave reviews.....

Banana Chocochip Muffins
~ adapted from Nigella
Serving Size : Makes 12

Ingredients:
3 very ripe bananas - (2 cups of banana pulp)
125ml vegetable oil
2 eggs (I used 3 eggs)
250g flour
100g caster sugar (I used 150 gms instead)
1/2 teaspoon bicarbonate of soda
1 teaspoon baking powder
150g butterscotch (or chocolate) morsels ( I used chocolate chips instead)
If your are eggo-phobic, put 1 teaspoon vanilla essence into the egg & oil mixture.

Method:
Preheat the oven to 200°C/gas mark 6 and line a 12-bun muffin tin with muffin papers.
Mash the bananas and set aside for a moment. (spin them in a blender into a puree.)
Pour the oil into a bowl and beat in the eggs.
Put the flour, sugar, bicarbonate of soda and baking powder into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas.
Fold in the butterscotch morsels, then place equal quantities in the prepared muffin tin and bake in the oven for 20 minutes.
Enjoy :)

The other variations which you can do with these muffins that come to my mind are, add walnuts or hazelnuts, gives a crunch n goes well with both banana n chocolate.
You could use butterscotch chips instead of chocochips or give a center of caramel sauce or even ice the muffins with toffee sauce.

These muffins are really worth a try... Let the monkey in you free... :) The chocolate splattered muffin will surely make your hands reach for another one....

I have been a Banana n Chocolate fan from my schools days after I ate it at a quaint bakery shop in Sarojni Nagar market. They had icecream flavours in combinations available in a huge scoop for just Rs. 15/-. I was a convert for life..... I know Banana and Chocolate as a combination is not a hot fav with many people.... Trust me... This muffin will make you change your opinion......It's amazing :)
I've made David lebovitz 'Banana Chocolate Upside Down Cake',It turned out well....It turned out well....This one was also appreciated widely.

Verdict:
Gauri: Hi! Sexy muffin. really gr8. My mom-in-law luved it and my husband rahul is asusual demanding more of them now. really apt taste, apt sweet. really nice. Thanks a ton.
Sravanti: yummy beyond words.

Cappuccino Buttermilk Muffins ~ Coffee Mania

Anything coffee attracts me like a magnet..... :-) There is no parallel to the goodness of a warm Cappuccino Buttermilk Muffin loaded with Dark Chocolate Chips....

This is the first time I made cupcakes.... where else would I have gotten the recipe other than Deeba.... her first try and the luscious 2nd try..... I just had to..... I wanted to drop whatever I was doing and just run to the kitchen... alas was not at home....

Took my first try for babaji.... They turned out yummy.... gobbled up quickly.....

The next lot was devoured at the Luthra's.....

The entire house was filled with the aroma of these muffins baking.... Could hardly wait for them to come out of the oven n cool...

Another lot for friends..... That's Shuchi and her parents with their Diwali gift.....

Vibha and Tarini loved the warmed muffins....

Cappuccino Buttermilk Muffins
adapted from Nic @ Cherrapeno and Deeba @ PAB
Ingredients:
1 1/2 cups plain flour
1/2 cup whole wheat flour
2 tsps baking powder
1/4 tsp salt
3/4 cup vanilla sugar
1/2 cup melted butter, cooled
1 cup buttermilk
2 eggs
1 tsp vanilla extract
2 tbsps instant coffee
1/2 cup chocolate chips
Method:
Preheated oven at 180C.
Mix coffee into melted butter. Whisk well.
Whisk eggs lightly into the buttermilk with the vanilla extract.
In a big bowl mix well the following - both flours, vanilla sugar, baking powder & salt.
Now pour in the buttermilk mixture & the butter mixture, and mix in gently by hand till moist. DO NOT over mix or muffins won't be nice & soft. Fold in chocolate chips lightly & do not over mix.
Fill up the prepared muffin tins 2/3 full, sprinkle a few coffee beans if you like. Put in to bake for 20-22 minutes till done.
Cool on rack.

There is really nothing better than gifting homemade goodies to loved ones on a festival... really spreads the cheer.....
A variation could be chopped walnuts on the top and chocochips inside.....

The ultimate in comfort food.... I'm already hungry n droolly writing about these muffins...
Lleaving to grab a muffin off the cooling shelf...
